SABORITA

Organic farming project located in the Alto Palanca region of Castellón. Since 2011, through agreements with the owners, Saborita has recovered 22 hectares of small plots of abandoned olive groves and another 12 that were already in production. In this area, the Serrana olive variety, native to the area, is grown, replicating the traditional way of organising crops in the region and applying the value of knowledge, care and agro-ecological and traditional crop management. The dispersion and location of the production plots in steep and difficult to access mountain terrain generates low yields in comparison with other more fertile and humid lands, however, it encourages the conservation of this unique mosaic landscape, rich in biodiversity and cultural heritage. The low density of cultivation interspersed with areas of wild vegetation and high biodiversity, mitigates the presence of parasites, which facilitates organic cultivation without the use of pesticides.
